  • 3 tsp table salt
  • 2 ea peel of oranges

Instructions

  1. In a 4-qt bowl, pour boiling water over margarine; stir to melt; cool to lukewarm. Sprinkle yeast over warm water and stir til dissolved. Stir yeast, 1 cup flour, cranberries, oats, sugar, eggs, salt and orange peel into margarine mixture til well blended. Stir enough flour to make a stiff dough. Knead dough on a lightly floured surface til smooth and elastic, abt 10 min. Shape into a ball. Place dough in greased bowl and turn to coat all sides.
  2. Cover bowl tightly with plastic wrap. Let rise in warm place about 1.5 hr. Punch dough down. Divide dough in 2. Place dough in 2 well-greased 9x5 inch baking pans. Cover with waxed paper and allow to rise in a warm place, 1.5 hrs. Bake in a preheated 375 F oven for 50-55 min. Turn out of pans, and cool on a rack. Optional glaze: Combine 1 cup powdered sugar, 1 Tbsp OJ, adding more OJ as need to get glaze to a medium-thin consistency. Drizzle glaze over loaves. Makes 2 loaves.
