Cranberry Blueberry Bundt Cake Recipe
Ingredients
- 4 oz cream cheese, room temperature
- 8 oz roll of blueberry or berry covered goat cheese
- 1 1/2 cups sugar
- 3 eggs
- 1 tsp vanilla ( or 1 tsp orange or almond extract )
- Optional: a little grated orange rind
- 2 cups chopped cranberries
- 3 cups flour
- dash salt
- 2 tsp baking powder
- 1/2 cup chopped walnuts
Instructions
- Beat the cheeses until smooth and creamy
- Beat in the egg then sugar and vanilla
- Sift flour and baking powder and salt
- Beat into creamed mixture until smooth
- Batter will be thick
- Stir in the chopped cranberries and nuts
- Place into a well greased and floured bundt pan
- Bake in a preheated 350F oven until tested done in center with wooden toothpick, about 50- 55 minutes
- Briefly cool in pan
- Invert to cool completely
- Wrap in foil
- Let flavors mellow a few hours or overnight before serving
