Cranberry Blueberry Bundt Cake Recipe

Ingredients

  • 4 oz cream cheese, room temperature
  • 8 oz roll of blueberry or berry covered goat cheese
  • 1 1/2 cups sugar
  • 3 eggs
  • 1 tsp vanilla ( or 1 tsp orange or almond extract )
  • Optional: a little grated orange rind
  • 2 cups chopped cranberries
  • 3 cups flour
  • dash salt
  • 2 tsp baking powder
  • 1/2 cup chopped walnuts

Instructions

  1. Beat the cheeses until smooth and creamy
  2. Beat in the egg then sugar and vanilla
  3. Sift flour and baking powder and salt
  4. Beat into creamed mixture until smooth
  5. Batter will be thick
  6. Stir in the chopped cranberries and nuts
  7. Place into a well greased and floured bundt pan
  8. Bake in a preheated 350F oven until tested done in center with wooden toothpick, about 50- 55 minutes
  9. Briefly cool in pan
  10. Invert to cool completely
  11. Wrap in foil
  12. Let flavors mellow a few hours or overnight before serving
