Pistachio White Chocolate Chip Cookies

Ingredients

  • 1 cup butter, softened
  • 1/2 cup shortening
  • 2 cups brown sugar
  • 2 eggs
  • 2 teaspoons vanilla extract
  • 1 1/2 cups all-purpose flour
  • 1 cup whole wheat flour
  • 1/2 cup oats, uncooked
  • 1 teaspoon baking powder
  • 1 teaspoon baking soda
  • 12 ounces white chocolate chips
  • 1 1/2 cups pistachios, chopped

Instructions

  1. In a large bowl, beat butter, shortening and sugar at medium speed until fluffy.
  2. Add eggs and vanilla, beat until just blended.
  3. In a separate bowl, combine flour, oats, baking powder and baking soda; gradually add to butter mixture, beating until just blended.
  4. Stir in white chocolate chips and pistachios.
  5. Drop by teaspoonfuls onto ungreased baking sheets.
  6. Bake at 350F for 10-12 minutes , until lightly browned.
  7. Cool 2 minutes on baking sheets, finish cooling on wire racks.
