White chocolate cranberry cookies bring together two contrasting flavors that make every bite interesting: creamy sweetness from white chocolate and a bright, slightly tart taste from dried cranberries. These cookies are easy enough for everyday baking but special enough for holiday gatherings, cookie exchanges, and homemade gifts. Their soft texture, chewy center, and colorful appearance make them a reliable favorite when you want a treat that feels a little more distinctive than a classic chocolate chip cookie.

  • 1 cup Brown sugar

White Chocolate Cranberry Cookies for Any Occasion The appeal of these cookies comes from the balance between rich and fruity flavors. White chocolate adds a smooth, buttery sweetness, while dried cranberries provide a pleasantly tangy contrast. For extra texture, chopped pecans or walnuts can be folded into the dough, although the cookies are equally enjoyable without nuts. A small amount of vanilla and a pinch of salt can also sharpen the overall flavor without overpowering the main ingredients. For the best results, avoid overbaking the cookies. Taking them from the oven when the edges are lightly golden and the centers still look slightly soft helps preserve a chewy texture as they cool. Chilling the dough before baking can also help the cookies hold their shape and develop a richer flavor. These simple details can make a noticeable difference in the finished batch.

Instructions

  1. Preheat oven to 350.
  2. Grease a 9x13 baking dish.
  3. In a large mixing bowl, add the oatmeal, flour, brown sugar, baking soda, salt, melted coconut oil, eggs and vanilla and beat until combined and the dough holds together (dough will seem oily, this is good). Mix in about 1 cup of the dark chocolate chunks.
  4. Turn half the batter out into prepared pan, pushing the dough into pan. Sprinkle on the remaining dark chocolate chunks and then place the remaining half of the dough over the chunks. Some of the chunks will most likely be sticking out. that is fine.
  5. Bake for about 20-25minutes, just do not over bake. Allow bars to cool in pan for at least 30 minutes before slicking and servings. The bars are crumbly so you make want to use a fork.
