Cranberry Muffins
Ingredients
- 1 c milk
- 1 c Whole wheat flour
- 2 ts Lemon zest
- 2 tb Molasses
- 1 Egg
- 1 ts Baking soda
- 1 c Fresh cranberries
- 1/4 c Chopped almonds
- 1/4 c Dark brown sugar
- 1/4 c Vegetable oil
- 1 c Unprocessed bran
- 1/2 ts Salt
Instructions
- Preheat oven to 375. Butter a 9-muffin pan. Combine bran, flour, sugar, soda, salt, cranberries, almonds & zest in mixing bowl. Stir to blend. Combine in another bowl milk, oil, molasses & egg. Stir milk mixture into dry mixture just until combined - do not overmix. Fill muffin cups about 2/3 full. Bake 15-20 minutes until risen & lightly browned. Approximately 10-20 minutes.
