Ranger Cookies

Ingredients

  • 1 cup unsalted butter (room temp)
  • 1 cup light brown sugar (packed)
  • 1 cup granulated white sugar
  • 1 teaspoon vanilla extract
  • 1 teaspoon salt
  • 2 large eggs
  • 2 cups all purpose flour
  • ½ teaspoon baking powder
  • 1 teaspoon baking soda
  • 1 cup old-fashioned oats
  • 1 cup chocolate chips
  • 2 cups crispy rice cereal

Instructions

  1. Preheat your oven to 350 degrees F and line two baking sheets with parchment paper or silicone baking mats. Set aside.
  2. In a large bowl, add the butter, sugars, vanilla, and salt and beat on medium until fluffy.
  3. Add in the eggs and beat until smooth.
  4. In a medium bowl, add the flour, baking powder, and baking soda. Whisk together.
  5. Add the flour mixture to the butter mixture and beat until fully incorporated.
  6. Stir in the oats, chocolate chips, and crispy rice cereal until evenly distributed.
  7. Cover the dough and refrigerate for at least 30 minutes.
  8. Once chilled, use a medium cookie scoop to drop the dough onto the prepared baking sheets.
  9. Bake for 10-12 minutes or until just golden around the edges.
  10. Remove from the oven and let cool on the pan for 5 minutes before moving to a cooling rack to completely cool.
