- Place chia seeds in a cup with 1/4 cup of water; let sit for 10-15 minutes while preparing other ingredients. Measure 1 cup of oats and blend dry in blender to make oat flour. In large mixing bowl mix out flour with the other cup of oats and add cinnamon, salt, baking powder, baking soda and stevia. In medium mixing bowl mash room temperature banana into smooth mixture. Add milk, vanilla and apple sauce. Mix thoroughly and add re-hydrated chia seeds. Pour wet mix into dry mix and stir thoroughly. Add honey and stir/mix. Add blueberries and walnuts and fold several times evenly distributing chunky ingredients. Spray muffin tin with non-stick oil.
