White chocolate cranberry cookies Page 2249

White chocolate cranberry cookies bring together two contrasting flavors that make every bite interesting: creamy sweetness from white chocolate and a bright, slightly tart taste from dried cranberries. These cookies are easy enough for everyday baking but special enough for holiday gatherings, cookie exchanges, and homemade gifts. Their soft texture, chewy center, and colorful appearance make them a reliable favorite when you want a treat that feels a little more distinctive than a classic chocolate chip cookie.

White Chocolate Cranberry Cookies for Any Occasion The appeal of these cookies comes from the balance between rich and fruity flavors. White chocolate adds a smooth, buttery sweetness, while dried cranberries provide a pleasantly tangy contrast. For extra texture, chopped pecans or walnuts can be folded into the dough, although the cookies are equally enjoyable without nuts. A small amount of vanilla and a pinch of salt can also sharpen the overall flavor without overpowering the main ingredients. For the best results, avoid overbaking the cookies. Taking them from the oven when the edges are lightly golden and the centers still look slightly soft helps preserve a chewy texture as they cool. Chilling the dough before baking can also help the cookies hold their shape and develop a richer flavor. These simple details can make a noticeable difference in the finished batch.

Instructions

  1. Whisk together flour (2 1/4 cups), cornstarch (2 teaspoons), baking soda (1/2 teaspoon), and salt (1 teaspoon) in a small bowl and set aside.
  2. In a large mixing bowl, using a handheld mixer, cream together the butter (14 tablespoons), granulated sugar (3/4 cup), and brown sugar (1/4 cup) on medium speed until light and fluffy.
  3. Add the vanilla (2 teaspoons) and eggs (2). Cream until well combined, about 1 minute. Add flour mixture just until combined.
  4. Add chocolate chips (1 1/2 cups) and mix until evenly distributed through the dough.
  5. Scoop out the dough, using a medium cookie scoop. Place on cookie sheet. Add extra chocolate chips to the top of the balls for a "bakery" look if desired. Refrigerate dough balls for 1 hour minimum. (Don't skip).
  6. Preheat oven to 350 °F (177 °C). Line baking sheets with parchment paper.
  7. Arrange cookie dough balls 2 inches apart on prepared baking sheets. Do not flatten. Using your fingers lightly tighten the bottom edge of the cookie where it sits on the baking sheet. (this helps them puff up more and not flatten as easily).
  8. Refrigerate the dough by scooping out the next batch to keep it cold.
  9. Bake in preheated oven for approximately 12-14 minutes or until the edges are beginning to brown. The center of the cookies will look slightly underdone in the center. Do not overbake or they will dry out!
  10. Cool for 10 minutes on the baking sheet. Transfer to cool completely on a wire baking rack. They will slightly deflate as they cool. Enjoy!

White chocolate cranberry cookies are a wonderful example of how a few familiar ingredients can create a dessert with plenty of personality. The combination of creamy white chocolate, tart cranberries, and a soft, chewy cookie offers enough contrast to keep every bite interesting. Whether served with coffee, packed into a lunchbox, or arranged on a holiday dessert table, they bring a warm homemade touch to almost any occasion. What makes these cookies especially appealing is their flexibility. You can add toasted nuts for crunch, adjust the amount of cranberries for a stronger fruit flavor, or keep the recipe simple for a classic combination. With careful baking and a little attention to texture, a basic cookie dough becomes a treat that looks festive and tastes thoughtfully made.
