Chocolate Chip Camp Cookies

Ingredients

  • 125 grams butter softened
  • 1/2 cup caster sugar
  • 1/2 cup Brown sugar
  • 1/2 cup Dessicated coconut
  • 1 teaspoon Vanilla extract
  • 1 Egg
  • 1 3/4 cups Self raising flour
  • 1/2 cup Dark chocolate bits
  • 1/2 cup Milk chocolate bits

Instructions

  1. 1. Preheat Oven to 160 C, Line 2 baking trays with non stick paper.
  2. 2. Beat softened butter, caster sugar, brown sugar, coconut and vanilla extract for 1-2 minutes or until smooth and well combined. Beat in 1 egg.
  3. 3. Stir in flour in two batches.
  4. 4. Stir in dark chocolate bits and milk chocolate bits until evenly distributed.
  5. 5. Spoon tablespoons of the mixture into balls and place on the lined trays. Press down lightly
  6. 6. Bake for 15-18 minutes or until light golden and cooked.
  7. 7. Transfer to a wire rack to cool.
  8. 8. Store in an airtight container for up to 1 week.
