White chocolate cranberry cookies Page 2767

White chocolate cranberry cookies bring together two contrasting flavors that make every bite interesting: creamy sweetness from white chocolate and a bright, slightly tart taste from dried cranberries. These cookies are easy enough for everyday baking but special enough for holiday gatherings, cookie exchanges, and homemade gifts. Their soft texture, chewy center, and colorful appearance make them a reliable favorite when you want a treat that feels a little more distinctive than a classic chocolate chip cookie.

Peanut Butter Cup Cookies

Ingredients

  • 36 miniature chocolate covered peanut butter cups, unwrapped
  • 1/2 cup unsalted butter, softened
  • 1/2 cup granulated sugar
  • 1/2 cup packed brown sugar
  • 1/2 cup creamy peanut butter
  • 1 large egg, at room temperature
  • 1 teaspoon vanilla extract
  • 1 tablespoon milk
  • 1/2 teaspoon salt
  • 1 teaspoon baking soda
  • 1 3/4 cups all-purpose flour

White Chocolate Cranberry Cookies for Any Occasion The appeal of these cookies comes from the balance between rich and fruity flavors. White chocolate adds a smooth, buttery sweetness, while dried cranberries provide a pleasantly tangy contrast. For extra texture, chopped pecans or walnuts can be folded into the dough, although the cookies are equally enjoyable without nuts. A small amount of vanilla and a pinch of salt can also sharpen the overall flavor without overpowering the main ingredients. For the best results, avoid overbaking the cookies. Taking them from the oven when the edges are lightly golden and the centers still look slightly soft helps preserve a chewy texture as they cool. Chilling the dough before baking can also help the cookies hold their shape and develop a richer flavor. These simple details can make a noticeable difference in the finished batch.

Instructions

  1. Preheat oven to 350° and lightly grease mini muffin tins.
  2. Place unwrapped peanut butter cups on a tray or plate and put in the freezer until ready to use.
  3. Using a large bowl and electric mixer, cream butter and sugars and peanut butter until fluffy.
  4. Beat in egg, vanilla, milk until well incorporated. Add salt and baking soda and continue beating, then gradually add flour and mix until just combined.
  5. Using a 1 tablespoon cookie scoop, drop cookie dough balls into prepared mini muffin tins.
  6. Bake for 8-10 minutes. Remove from oven and remove candies from freezer. Immediately press peanut butter cups into each cookie, and place pan in refrigerator for about 20 minutes (this will allow the cookies to cool without the candies melting).
  7. Once cooled carefully remove cookies from pan and place on cooling rack. Store in an airtight container and hide them.....they disappear fast!

White chocolate cranberry cookies are a wonderful example of how a few familiar ingredients can create a dessert with plenty of personality. The combination of creamy white chocolate, tart cranberries, and a soft, chewy cookie offers enough contrast to keep every bite interesting. Whether served with coffee, packed into a lunchbox, or arranged on a holiday dessert table, they bring a warm homemade touch to almost any occasion. What makes these cookies especially appealing is their flexibility. You can add toasted nuts for crunch, adjust the amount of cranberries for a stronger fruit flavor, or keep the recipe simple for a classic combination. With careful baking and a little attention to texture, a basic cookie dough becomes a treat that looks festive and tastes thoughtfully made.
