White chocolate cranberry cookies Page 3173

White chocolate cranberry cookies bring together two contrasting flavors that make every bite interesting: creamy sweetness from white chocolate and a bright, slightly tart taste from dried cranberries. These cookies are easy enough for everyday baking but special enough for holiday gatherings, cookie exchanges, and homemade gifts. Their soft texture, chewy center, and colorful appearance make them a reliable favorite when you want a treat that feels a little more distinctive than a classic chocolate chip cookie.

White Chocolate Cranberry Cookies for Any Occasion The appeal of these cookies comes from the balance between rich and fruity flavors. White chocolate adds a smooth, buttery sweetness, while dried cranberries provide a pleasantly tangy contrast. For extra texture, chopped pecans or walnuts can be folded into the dough, although the cookies are equally enjoyable without nuts. A small amount of vanilla and a pinch of salt can also sharpen the overall flavor without overpowering the main ingredients. For the best results, avoid overbaking the cookies. Taking them from the oven when the edges are lightly golden and the centers still look slightly soft helps preserve a chewy texture as they cool. Chilling the dough before baking can also help the cookies hold their shape and develop a richer flavor. These simple details can make a noticeable difference in the finished batch.

Instructions

  1. Preheat oven to 350˚F and line a baking sheet with parchment paper.
  2. In a medium bowl, whisk together flour, baking soda and salt. Set aside.
  3. In a large bowl with an electric mixer, beat shortening and sugars at medium speed until light and fluffy – about 2 minutes. Add eggs and vanilla, beating until combined. Add flour mixture, about 1/2 cup at a time, mixing until incorporated, scrapping sides as needed.
  4. Stir in chocolate chips and walnuts.
  5. Using a medium cookie scoop, drop 2 tablespoon balls of dough onto cookie sheet. Bake for 9 minutes.
  6. Remove from oven and top cookies with marshmallow halves. Return to oven for 2 – 3 minutes. Remove from oven and allow cookies to cool on baking sheet for about 5 minutes before transferring to a cooling rack.
  7. Repeat steps 6 – 7 to bake remaining cookies.
  8. For the chocolate drizzle:
  9. In a microwave safe bowl, melt chocolate chips in 30 second intervals. Stir in shortening to smooth out the melted chocolate and allow for easier drizzling.
  10. Drizzle chocolate over cooled cookies and top with walnut pieces.

White chocolate cranberry cookies are a wonderful example of how a few familiar ingredients can create a dessert with plenty of personality. The combination of creamy white chocolate, tart cranberries, and a soft, chewy cookie offers enough contrast to keep every bite interesting. Whether served with coffee, packed into a lunchbox, or arranged on a holiday dessert table, they bring a warm homemade touch to almost any occasion. What makes these cookies especially appealing is their flexibility. You can add toasted nuts for crunch, adjust the amount of cranberries for a stronger fruit flavor, or keep the recipe simple for a classic combination. With careful baking and a little attention to texture, a basic cookie dough becomes a treat that looks festive and tastes thoughtfully made.
