Instructions

  1. Use two pans (non-stick is good). Turn stove on to medium heat.
  2. Set a plate in the oven, set to warm (lowest temperature available).
  3. Defrost berries, if frozen (raspberries best from frozen).
  4. Add all ingredients to medium-sized bowl and mix with electric mixer until smooth.
  5. Spray pans with oil.
  6. Use measuring cup to scoop about 1/4 cup mixture and pour into pan. Lift pan and rotate while tilting so that mixture spreads into thin layer, somewhat rounded. Do same in other pan.
  7. Crêpe will cook quickly. Check bottom. When it gains a little colour, flip. When second side browns a little, roll crêpe and place in oven. It may be a little crispy and will soften in the oven.
  8. There is little time between, but cut up banana into bowl. Cinnamon and sugar on cut-up apple pieces is also a good filling, along with whipped cream.
  9. When eating, unroll crêpe, add a line of berries, banana bits, etc., along with a dusting of icing sugar and cinnamon. Roll the crêpe back up, slice, and enjoy.
