White chocolate cranberry cookies bring together two contrasting flavors that make every bite interesting: creamy sweetness from white chocolate and a bright, slightly tart taste from dried cranberries. These cookies are easy enough for everyday baking but special enough for holiday gatherings, cookie exchanges, and homemade gifts. Their soft texture, chewy center, and colorful appearance make them a reliable favorite when you want a treat that feels a little more distinctive than a classic chocolate chip cookie.

White Chocolate Cranberry Cookies for Any Occasion The appeal of these cookies comes from the balance between rich and fruity flavors. White chocolate adds a smooth, buttery sweetness, while dried cranberries provide a pleasantly tangy contrast. For extra texture, chopped pecans or walnuts can be folded into the dough, although the cookies are equally enjoyable without nuts. A small amount of vanilla and a pinch of salt can also sharpen the overall flavor without overpowering the main ingredients. For the best results, avoid overbaking the cookies. Taking them from the oven when the edges are lightly golden and the centers still look slightly soft helps preserve a chewy texture as they cool. Chilling the dough before baking can also help the cookies hold their shape and develop a richer flavor. These simple details can make a noticeable difference in the finished batch.

Instructions

  1. Step 1
  2. Heat oven to 350°F. Lightly grease 13x9x2-inch baking pan. Combine sweetened condensed milk, lemon juice and lemon peel in medium bowl; set aside. Measure out 1/4 cup and 1/3 cup white creme chips; set aside. Add remaining white creme chips to lemon mixture.

Remove 1-2/3 cups oats mixture; set aside. Add egg to remaining mixture, blending until crumbly. Press egg/crumb mixture on bottom of prepared pan. Gently spoon lemon mixture on top, spreading evenly. Add reserved 1/3 cup white creme chips to reserved crumb mixture. Sprinkle over lemon layer, pressing crumbs lightly.
  5. Step 3
  6. Bake 20 to 25 minutes or until lightly browned. Cool in pan on wire rack. Place remaining 1/4 cup white creme chips and shortening in small microwave-safe bowl. Microwave at Medium (50%) 30 seconds; stir. If necessary, microwave at Medium 10 seconds at a time, stirring after each heating, until chips are melted and mixture is smooth when stirred. Drizzle over bars. Allow drizzle to set; cut into bars. *To toast pecans: Heat oven to 350°F. Spread pecans in thin layer in shallow baking pan. Bake 7 to 8 minutes, stirring occasionally, until golden brown; cool. White Creme Chip Lime Streusel Bars: Make as directed above substituting lime for lemon.
