Ingredients

  • 1/2 ts Salt
  • 1 ts Baking soda
  • 2 c Packed light brown sugar
  • 2/3 c Cocoa
  • 1 14-oz can sweetened condensed milk
  • 1 c Margarine softened
  • 2 1/2 c Flour
  • 1/2 c Margarine
  • 1 ts Vanilla
  • 1/2 ts Powdered instant coffee
  • 3 c Quick Oats
  • 1/4 c Sugar
  • 1 1/2 ts Vanilla
  • 2 Eggs
  • 1 1/2 c walnuts Chopped; divided

Instructions

  1. Melt margarine in Microwave. Add cocoa and sugar and stir. Add sweetened condensed milk. Microwave and stir to thick, smooth consistency. Remove from oven. Add 1 1/2 tsp. vanilla. Heat oven to 350 F. In large mixer bowl, beat softened margarine and brown sugar until light and fluffy. Add eggs, 1 tsp. vanilla and coffee powder. Beat well. In separate bowl, mix oats, flour, soda, salt and 1 cup of chopped nuts. Gradually add to butter mixture, the last 1/4 by hand. Remove 2 cups of mixture. Press rest into a 15 1/2x10 1/2" pan, ungreased. Top with chocolate filling. Sprinkle on rest of oat mixture and top with last 1/2 cup nuts. Press down lightly. Bake at 350 F. for 25 minutes, or until golden. Cool well before cutting into bars.
