White chocolate cranberry cookies Page 3796

White chocolate cranberry cookies bring together two contrasting flavors that make every bite interesting: creamy sweetness from white chocolate and a bright, slightly tart taste from dried cranberries. These cookies are easy enough for everyday baking but special enough for holiday gatherings, cookie exchanges, and homemade gifts. Their soft texture, chewy center, and colorful appearance make them a reliable favorite when you want a treat that feels a little more distinctive than a classic chocolate chip cookie.

White Chocolate Cranberry Cookies for Any Occasion The appeal of these cookies comes from the balance between rich and fruity flavors. White chocolate adds a smooth, buttery sweetness, while dried cranberries provide a pleasantly tangy contrast. For extra texture, chopped pecans or walnuts can be folded into the dough, although the cookies are equally enjoyable without nuts. A small amount of vanilla and a pinch of salt can also sharpen the overall flavor without overpowering the main ingredients. For the best results, avoid overbaking the cookies. Taking them from the oven when the edges are lightly golden and the centers still look slightly soft helps preserve a chewy texture as they cool. Chilling the dough before baking can also help the cookies hold their shape and develop a richer flavor. These simple details can make a noticeable difference in the finished batch.

Instructions

  1. Preheat oven to 200°C (180°C fan) mark 6 and line a 20.5cm (8in) square tin with baking parchment. In a food processor, pulse together butter, 100g (3½oz) flour, icing sugar and cocoa powder until mixture resembles breadcrumbs. Add 1tsbp cold water and pulse again until it starts to come together. Tip the sticky mixture into the base of the tin and, with wet hands, press it in to make an even layer that covers the bottom of the tin. Bake for 15min.
  2. Meanwhile, mix together eggs, caster sugar, yogurt, remaining flour, milk and vanilla. Fold through strawberries. Remove tin from oven and turn heat down to 180°C (160°C fan) mark 4. Spoon the strawberry mixture on top of the pastry, spreading it out evenly. Return to the oven and bake for 30-35 min. Cool completely in tin, leaving it for 3-4 hours, or overnight, to set fully.
  3. Serve cut into squares dusted with a little icing sugar.

Whether served with coffee, packed into a lunchbox, or arranged on a holiday dessert table, they bring a warm homemade touch to almost any occasion. What makes these cookies especially appealing is their flexibility.
