White chocolate cranberry cookies Page 4014

White chocolate cranberry cookies bring together two contrasting flavors that make every bite interesting: creamy sweetness from white chocolate and a bright, slightly tart taste from dried cranberries. These cookies are easy enough for everyday baking but special enough for holiday gatherings, cookie exchanges, and homemade gifts. Their soft texture, chewy center, and colorful appearance make them a reliable favorite when you want a treat that feels a little more distinctive than a classic chocolate chip cookie.

  • 1/4 cup plus 2 tablespoons unsweetened cocoa powder

  • 1 teaspoon pure vanilla extract
  • 1 large egg white, beaten
  • 1 pound semisweet or bittersweet chocolate, tempered (see Note)

White Chocolate Cranberry Cookies for Any Occasion The appeal of these cookies comes from the balance between rich and fruity flavors. White chocolate adds a smooth, buttery sweetness, while dried cranberries provide a pleasantly tangy contrast. For extra texture, chopped pecans or walnuts can be folded into the dough, although the cookies are equally enjoyable without nuts. A small amount of vanilla and a pinch of salt can also sharpen the overall flavor without overpowering the main ingredients. For the best results, avoid overbaking the cookies. Taking them from the oven when the edges are lightly golden and the centers still look slightly soft helps preserve a chewy texture as they cool. Chilling the dough before baking can also help the cookies hold their shape and develop a richer flavor. These simple details can make a noticeable difference in the finished batch.

Instructions

  1. Preheat the oven to 300°. Spread the nuts in a pie plate and toast them in the oven until golden brown, about 20 minutes. Transfer the nuts to a plate and let them cool completely. Raise the oven temperature to 350°.
  2. In a food processor, combine the flour with the milk chocolate and process until the mixture resembles coarse meal. Add the sugar, cocoa powder and salt and pulse to mix. Add the beaten whole eggs and the vanilla and process until a dough forms. Transfer the dough to a lightly floured surface and knead in the toasted nuts.
  3. Divide the dough in half. On a lightly floured work surface, roll each piece of dough into a foot-long log. Transfer the logs to a baking sheet lined with parchment paper or foil and flatten them slightly. Lightly brush the logs with the beaten egg white and bake for about 30 minutes, or until firm to the touch and slightly cracked. Remove from the oven and let cool for 1 minute. Turn the oven down to 325°.
  4. Transfer the hot logs to a work surface. Using a serrated bread knife or a sharp chef's knife, slice the logs 1/3 to 1/2 inch thick on the diagonal. Arrange the slices upright on the baking sheet and bake for about 5 minutes, or until dry. Transfer the biscotti to a wire rack and let cool completely.
  5. Line a baking sheet with wax paper. Dip half of a cookie into the tempered chocolate, letting the excess drip back into the bowl, and set the cookie on the wax paper, cut side down. Repeat with the remaining cookies. Let stand in a cool, dry place until set.

White chocolate cranberry cookies are a wonderful example of how a few familiar ingredients can create a dessert with plenty of personality. The combination of creamy white chocolate, tart cranberries, and a soft, chewy cookie offers enough contrast to keep every bite interesting. Whether served with coffee, packed into a lunchbox, or arranged on a holiday dessert table, they bring a warm homemade touch to almost any occasion. What makes these cookies especially appealing is their flexibility. You can add toasted nuts for crunch, adjust the amount of cranberries for a stronger fruit flavor, or keep the recipe simple for a classic combination. With careful baking and a little attention to texture, a basic cookie dough becomes a treat that looks festive and tastes thoughtfully made.
