Instructions

  1. in a bowl, combine graham cracker crumbs, butter press onto the bottom of a 9 inch springform pan coated with cooking spray, place on baking sheet, bake at 325 degrees for 8-10 minutes or until set, cool on wire rack.
  2. In saucepan combine the cranberries, sugar, water cook over medium heat until berries pop, about 10 minutes cool.
  3. In bowl combine the first 7 filling ingredients, beat until blended, add eggs and egg whites, beat on low speed just until combined and then pour into crust.
  4. Place the pan on a double thicknes of heavy duty foil, securely wrap foil around pan, place into a larger pan and add 1 inch of hot water to the larger pan (water bath) Bake at 325 degrees for 55-65 minutes or until center is just set and top appears dull, remove pan from water bath, cool on a wrap for 10 minutes, then carefully run knife around edges of pan to loosen, cool 1 hour longer, then gently spoon the cranberry mixture over the cheesecake, then put in fridge overnight
