  • 1 cup (213g) light brown sugar or dark brown sugar packed
  • 8 tablespoons (113g) unsalted butter at room temperature
  • 2 tablespoons (39g) light corn syrup
  • 1 teaspoon King Arthur Pure Vanilla Extract
  • 1 large egg
  • 1 large egg yolk
  • 1/2 cup plus 2 tablespoons (107g) chocolate chips
  • about 1 tablespoon flaky sea salt for garnish; optional

Place the remainder on one of the prepared baking sheets, stir to combine, and spread into a single layer.  , Bake the coconut and pecans for 8 to 10 minutes, stirring once halfway through, or until most of the coconut has become golden brown and fragrant. Transfer the ingredients to the other baking sheet to cool. , In a medium bowl, combine the flour, oats, salt, cinnamon, baking powder, and baking soda.  , In a large bowl or the bowl of a stand mixer fitted with the flat beater, beat the brown sugar, butter, and corn syrup until fluffy, about 2 minutes on medium speed.  , Add the vanilla, stir to combine, then add the egg followed by the egg yolk, mixing after each addition until incorporated.
