  • 2 1/2 cups Carrots shredded
  • 1/2 cup Coconut shredded
  • 1/2 cup Pecans chopped
  • FROSTING
  • CREAM CHEESE FROSTING for 13x9x2 1 layer
  • 1/2 cup BUTTER 1 STICK
  • 4 ounces Cream cheese
  • 1 teaspoon Vanilla
  • 1 teaspoon Lemon
  • 2 1/2 cups Powdered sugar
  • WEDDING FROSTING if making a wedding cake
  • 1 1/2 cups Butter
  • 2 package Cream cheese
  • 2 teaspoons Vanilla
  • 2 teaspoons Lemon juice
  • 6 1/2 cups Powdered sugar

Instructions

  1. 350? 40-60 min 13X9X2 PAN - THIS CAKE IS MEANT FOR A WEDDING CAKE BUT MAKES A GREAT BUFFET DESSERT.
  2. FOR WEDDING CAKE MAKE TWICE:
  3. 1ST LAYER 13X9X2
  4. 2ND LAYER 9X5 1/2
  5. 3RD LAYER 4 X 5 1/2
  6. Mix flour, baking soda, cinnamon, baking powder and salt.
  7. In another bowl beat eggs and sugar on high until light and fluffy. Beat i oil, 1/2 cp of cranberry sauce and vanilla.
  8. Reduce speed to medium and add flour mixture, about 1/3 at a time, beating well after each addition.
  9. Fold in carrots, cocnut, and pecans,
  10. Spread batter evenly into Pam (flour, butter spray) sprayed pan. Spoon remaining cranberry sauce on top of batter and swirl with a knife.
  11. Cook until cake tester inserted into center of cake comes out clean
  12. Place on wire rck to cool for 5 min. Loosen cake around edges of pan and tun out onto wire rack - cool completely
  13. Frost with Cream Cheese Frosting.
  14. CAN LEAVE CAKE IN PAN AND FROST ALSO
  15. FROSTING:
  16. In a large bowl, bsea at room temperature, butter and cream cheese on high speed untiul smooth and creamy. Beat in vanilla and lemon juice. Add sugar about 1 cup at a time, beating well after each addition until frosting is fluffy and thick enough to spread. Can be tinted if desired.
  17. refridgerate until about 3 hours before serving.
