White chocolate cranberry cookies bring together two contrasting flavors that make every bite interesting: creamy sweetness from white chocolate and a bright, slightly tart taste from dried cranberries. These cookies are easy enough for everyday baking but special enough for holiday gatherings, cookie exchanges, and homemade gifts. Their soft texture, chewy center, and colorful appearance make them a reliable favorite when you want a treat that feels a little more distinctive than a classic chocolate chip cookie.

White Chocolate Cranberry Cookies for Any Occasion The appeal of these cookies comes from the balance between rich and fruity flavors. White chocolate adds a smooth, buttery sweetness, while dried cranberries provide a pleasantly tangy contrast. For extra texture, chopped pecans or walnuts can be folded into the dough, although the cookies are equally enjoyable without nuts. A small amount of vanilla and a pinch of salt can also sharpen the overall flavor without overpowering the main ingredients. For the best results, avoid overbaking the cookies. Taking them from the oven when the edges are lightly golden and the centers still look slightly soft helps preserve a chewy texture as they cool. Chilling the dough before baking can also help the cookies hold their shape and develop a richer flavor. These simple details can make a noticeable difference in the finished batch.
Instructions
- To start preparing this sweet dish, preheat ghee in a frying pan. Once the ghee is heated up, add semolina and roast it over a medium to low flame until the semolina turns a shade darker in colour. After the required colour is obtained, add grated coconuts and mix. Roast semolina and grated coconut further for 3 to 5 minutes. Turn off the flame and keep it aside.
- Now, take a saucepan and pour in the milk. Keeping the flame on low, start simmering the milk. Add the roasted semolina and coconut mixture (Step 1) into the milk and stir so as to avoid any lumps in the mixture. After a few minutes, the milk will be absorbed by semolina and coconut. At this stage, add cardamom powder and sugar. Mix them well. Cook for another 5 to 10 minutes until you observe a thick mass being formed and the mixture is leaving the sides of the pan. Remove from heat.
- Grease a tray with some ghee and spread out the thick semolina-coconut mixture onto it. Even out the surface of the mixture using a spatula. Pop the tray in a refrigerator and let the barfi mixture set completely. Cut into desired shapes and sized, and garnish with pistachios. Enjoy.
